Sauces

  Hari chutney(mint chutney)

Ingredients:
Cilantro-1 bunch
Mint-1/2 bunch
Lemon juice-3 tbsp
Ginger-1″ piece
Sugar-1 pinch(optional)
Water-1 tsp
Salt-1 1/2 tsp
Method:
Grind all the ingredients together and use immediately for best results.
 
Imli chutney:

Ingredients:
Tamarind paste-1 cup
grated Jaggery-4 tbsp
Cumin powder-2 tsp
Chilli powder-2 tbsp
Salt-a pinch
Water-10 tbsp
Method:
Heat water and jaggery in a pan.
Bring it to a boil and then strain to remove impurities.
Add the tamarind paste,salt,chilli powder and cumin powder and let it boil for 3-4 mins.
 
 
 
 
 
 
 
Cool and store in refrigerator
 

 


 

.Mayonnaise:

 Ingredients:
 
 Paneer or Tofu- 20 to 35 gms
Water-6 tsp
Sunflower oil-2 teaspoons
Vinegar or lime juice(optional)-to taste
Salt(to taste)
Dry herbs(to taste) 
 
 
 
 
 
 Method:
 
1.Blend all the ingredients except for the sunflower oil to a fine but a thick paste.
 
2.The consistency of the paste should be thick but spreadable.
 
3.After making the paste,add sunflower oil to the paste while blending.
 
4.Serve as a dip or a salad dressing.
 TIPS
 
All ways add water and oil in drops.The water content in tofu or paneer may vary.My mayo needed only a tsp of oil and a tbsp of water.
 
 
French dip or white sauce:
1. 3 teaspoons butter 
2. 2 1/2 teaspoons flour 
3. 3 cups milk 
4. 1 small Onion 
5. 1/2 teaspoon chopped Coriander Leaves 
6. 1 piece bay leaf 
7. 4 peppercorns 
8. pinch of nutmeg 
9. pinch of red chillies 
10. 1 Clove 
11. 1/2 Lemon 
12. 1/2 teaspoon Salt
 
 
1. Put the milk to boil with chopped onion, coriander, clove, bay leaf and peppercorns. 

2. Melt the butter, stir in the flour and cook a little without browning, then add hot milk. 

3. Whisk over the fire until it boils and let it simmer for 6 minutes. 

4. Strain or pass through a sieve, return to the pan, season lightly with a pinch of nutmeg, red chilli and salt. 

5. When cold, add lemon juice. 

6. Serve with fried dishes.

 Chocolate sauce:

Ingredients:

1. Chocolate blocks or broken ones-1 kg
2. Unsalted butter-3 blocks
Method:
1There are many ways to melt the chocolate.Let me mention a few.

2. Double saucepan method:With the first pan in the bottom with water boiling,place butter and chocolates in the second and wait till it melts.

3. Water bath.Do the same but the vessel must be floting in the boiling water.

4. Micro wave:In a glass vessel(microwave vessel)Add the above and microwave for 2 mins (1min then stiring)at 360*degrees.

5. Direct:Add boiling milk(heavy) to the chocolates.And stir constantly.
